The Trail House Sour

Former owner and bar manager, at the now closed, Montana’s Trail House in Bushwick, Brooklyn. This was a seasonal riff on one of my favorite modern cocktails by Guisppe Gonzales - The Trinidad Sour. This drink was a creative drink in technique using the cordial to beef up the body of the thin and bitterness of the angostura.

RECIPE

  • 1 ounce Angostura cordial (see below)
  • 1-ounce walnut liqueur, preferably Rapa Giovanni "Ratafia di Andorno" Liquore di Noci
  • 1/2 ounce bourbon, preferably Medley Brothers
  • 3/4-ounce lemon juice
  • 3 drops saline solution (3:1, water:salt)
  • Garnish: Maraschino cherry wrapped in a lemon twist


  • Angostura Cordial
  • 2 cups Angostura bitters
  • 3 cups white rum
  • 3 cups water
  • 2 cups white cane sugar
  • 2 cups demerara sugar cubes
  • peels of two lemons
  • peel of one orange
  • spice blend (2 cinnamon sticks, 3 pods star anise, 1 whole nutmeg, 5 allspice, 5 juniper berries)

  • Add all ingredients except for sugar into pot and bring to a boil. Reduce to medium heat then add sugar. Keep heat at medium and stir until sugar is dissolved. Let cool and fine strain.

  • 1. In a shaker tin, combine all ingredients with ice and shake.
  • 2. Double strain into a coupe and garnish with a skewered maraschino cherry wrapped in a lemon twist.

ABOUT

My name is Austin Hartman. Chicago born, California raised and been living in Bushwick, Brooklyn for the past 11 years.

Within the hospitality industry, he started working at Hotel Delmano in Williamsburg.

After a long tenure there, and another of notable bars such as Union Pool, No Name Bar and Marlow & Sons, I went on to partner up and open Montana’s Trail House as operating partner & beverage director in 2014.

In 2015 I was selected to be among the first group to complete the ACR (Authentic Caribbean Rum) course via WIRSPA which took us through the Caribbean studying the various forms of rum distillation and their histories.

With the Trail House closure in 2018, I went on to open Paradise Lounge in Ridgewood where we won the NY Cocktail Compeition’s Tiki Throwdown in 2018 & ‘19, and placed in the 2020 Tiki To-Go Down competition.

As well, with my absolute love of cane spirits, I went on to co-found the Cane Club Collective (2016) & Doom Tiki (2019) with a focus on cane spirits education, community building and developing the current discourse of r(h)um.

Aside from serving up delicious rum cocktails, teaching about rum - there is a good chance you’ll find me on the beach or boat sipping on some rum, reading comic books or playing tabletop games.
